The ten remaining chefs are split into two groups, with the first team of five working as a team to prepare a three course fine dining menu for London's Law Society. The contestants have two and a half hours to create a meal from ingredients including brown crabs, guinea fowl, berries and nuts, under the watchful eye of the judges. Later, the chefs must work as individuals to cook a showstopper dish, as they compete for a place in the semi-final

The 12 remaining chefs cook off against each other for the first time and have to create one outstanding dish of their own invention from a selection of meat, fish, fruit and vegetables. To test them even further, the judges have removed all the modern equipment from the kitchen, leaving the contestants to use only the basics of hobs and ovens. The four weakest chefs must return to battle it out for the final two places in the next round and face the challenge of producing a dish using unused ingredients from the previous test

The best six chefs from the week battle it out in the last of the quarter-finals. First the judges Monica Galetti and Marcus Wareing ask them to make a pastry dish of their own invention from 10 ingredients including peaches, champagne, pecan nuts and pudding rice. After a double elimination, the remaining four contestants have to cook two courses for food critics Charles Campion, Jay Rayner and William Sitwell, before finding out who is going through to the knockout week
